Vinification & Maturation

Carefully with a lot of care, hard work and selection through the year we pick up fully matured grapes at harvest time and ferment them in stainless steel tanks for 6 months. In the cellar with as little touch as possible we follow the natural idea of wine. Through this time no sulfide or any additives were added and the sediments are regularly mixed. The malolactic fermentaion is completed. The wine is unfiltrated and a minimum amount of sulfide was added just before bottling.
